Paean a poem dedicated to a specific person

Lewis Turco mentions a paean in The Book of Forms. This occasional poem is written in celebration of a specific person. It seems to me that this form would make a good birthday poem. My mother's birthday is on March 19, so I think I will write a paean to Mom.

The issue now is how to I start the poem. I want to praise my mother and I am not sure how to start it because Mom has so many wonderful attributes. Perhaps I should focus on the things Mom likes to do. Mom likes to talk and she likes to go to poetry readings.
