Citrus-Marinated Chicken Salad



When I make Chicken Salad I want Mexican chicken in the recipe. I have found that El Pollo Loco’s citrus-marinated flame-grilled chicken adds the best flavor to my chicken salad.

1 El Pollo Loco’s citrus-marinated flame-grilled chicken
4 small or 2 large Jalapenos sliced thin with seeds removed
1 green pepper sliced thin
1 yellow pepper sliced thin
1 red pepper sliced thin
1 bunch of radishes with each radish cut in half
1 bunch green onions diced
1 head of lettuce cut into small or medium pieces
1/2 cup grated cheese
1/4 cup nuts
Either blue cheese or ranch dressing to taste

I prefer my chicken with the skin still on it, so I cut the chicken off the bone and put in a serving dish. This way everyone in the house can put as much or as little chicken as desired want on each salad. I also diced the onions, slice the Jalapenos peppers and put them in separate containers. The rest of the ingredients, with the exception of the dressing, I mix together in a large salad bowl.
